I have here 2 bread recipes that have almost exactly the same ingredients. Well, one of them is a pretty traditional one, calling for milk and butter, and the other one is a vegan version of same, with water instead of milk, and some kind of vegetable oil instead of butter (well, okay, the vegan version also calls for turbinado sugar, whereas the traditional recipe obviously means for you to use white granulated sugar, but this is really an insignificant difference). All the amounts of all the ingredients are the same, except for the butter/oil. The traditional recipe calls for 1 1/2 tablespoons of butter for one loaf of bread. The vegan recipe calls for 1/6 cup (2 2/3 tablespoons) of vegetable oil for one loaf of bread. I've actually followed both recipes before, and the loaves come out practically identical (as far as I recall; I've never made a side-by-side comparison).

Hmm, I sense an experiment coming on. I'll need more yeast for that.

Sometimes I wish I was more like a normal person, and didn't have to keep finding new things to be obsessive about...
